Easter Pie

Today I made an Easter Pie which is a traditional Italian creation with ancient historical roots.  It is made with Fillo dough, Confectioners Sugar, Ricotta Cheese, Toasted Pine Nuts, Cooked Rice, Eggs, Orange Zest, Lemon Zest and Butter.  I particularly liked the significance of it in regard to Easter.  In Naples it is known as "pastiera," and is made with ricotta cheese and whole grains of wheat to symbolize rebirth.
